In 1956, master sausage maker Fred Voll and his wife, Käthe, brought their craft from Schweinfurt, Bavaria, to Madison, Wisconsin. They opened the Bavaria chalet for business in 1961, specializing in crafting premium meats in their Wurstküche (sausage kitchen). Today the next generation is keeping up the family business, embracing the original German family recipes.
About the landjäger: A semi-dried sausage, Ländjager is named for the hunter-policemen who patrolled the Tyrol and Volaberg in western Austria and can still be found in hiker’s rucksacks across the German-speaking regions of Bavaria, Switzerland, and Alsace. Made from lean beef and natural spices, the sausages are pressed into a mold and then natural hickory smoked. No MSG, no refrigeration needed—and no excuses not to savor the snappy, peppery goodness of this singular meat snack.
