An 1849 homestead located in the southwestern hills of Wisconsin is where the Summer Kitchen calls home. Original offerings, packaged the old school way (in jars with paraffin wax), were made from the wild-growing backyard plums and apples. Today, the Summer Kitchen orchard features a vibrant selection of apple, plum, cherry, and peach trees, along with grapes, rhubarb, currants, and several varieties of berries—and still keeps a stand at the Dane County Farmers Market in Madison.
About the apple butter: Still primarily a farmer’s market business, Dan Aultman slowly produces just 10 jars of this deeply satisfying apple butter at a time on the Summer Kitchen cook stove. And he uses just one ingredient: apples. Try it spread on toast (or pound cake), swirled into yogurt, or straight from the jar.
